4 Easy and Delicious Rice Recipes for the Whole Family 

Rice is one of the most versatile foods in the kitchen. It can be used in a wide variety of dishes, from salads to main dishes, all very easy to prepare, ideal for both novice and experienced cooks. Rice is an economical and healthy ingredient, which makes it an excellent option to feed the whole family. In this post, we will share with you 4 easy and delicious rice recipes that the whole family will enjoy.

Rice with chicken (Arroz con pollo)

Ingredients

  • 2 cups of white rice.
  • 2 chicken breasts.
  • 1 onion.
  • 1 green bell pepper.
  • 1 red bell bell pepper.
  • 2 carrots.
  • 2 cups chicken broth.
  • 2 tablespoons of olive oil.
  • Salt and pepper to taste.

Preparation

  1. Rinse the rice with cold water and let it drain.
  2. Cut the chicken into small cubes and season with salt and pepper.
  3. In a large pot, heat the olive oil over medium heat. Add the chicken and cook until golden brown. Remove the chicken from the pan and set aside.
  4. In the same pot, add the onion, chopped in half moons, and the peppers along with the carrots cut into strips. Cook for 5 minutes or until soft.
  5. Add the rice to the pot and mix well with the vegetables.
  6. Place the chicken on top of the rice and cover the pot. Reduce the heat to the minimum for 5 minutes and then turn it off. It is now ready to serve.

Rice salad

Ingredients

  • 2 cups of white or brown rice.
  •  1 can of tuna.
  • 1 tomato.
  • 1 cucumber.
  • 1 red bell pepper.
  • ½ cup of black olives.
  • ¼ cup of olive oil.
  • 2 tablespoons of lemon juice.
  • Salt and pepper to taste.

Preparation

  1. Rinse the rice with cold water until it runs clear and let it drain.
  2. Cook rice in boiling salted water for 20 minutes or until tender (brown rice will take about 40 minutes). Drain the rice and rinse it with cold water.
  3. Cut the tomato, the cucumber and the red bell pepper into small cubes. Add to the rice along with the olives and tuna.
  4. In a small bowl, mix the olive oil, lemon juice, salt and pepper.
  5. Add the oil and lemon mixture to the salad, mix well and serve.

Fried rice with vegetables

Ingredients

  • 2 cups cooked and refrigerated white rice.
  • 2 tablespoons of sesame oil or sunflower oil.
  • 1 onion, chopped.
  • 2 cloves of garlic, chopped.
  • 1 red bell pepper, chopped.
  • 1 cup of chopped broccoli.
  • 1 cup of chopped carrots.
  • 1 cup of fresh or frozen peas.
  • 3 tablespoons of soy sauce.
  • 1 tablespoon of olive oil.
  • 1 teaspoon of grated ginger.
  • Salt and pepper to taste.

Instructions

1. In a large skillet, heat the sesame or sunflower oil over medium-high heat. Add the onion and garlic and cook for 2 minutes, stirring occasionally.

2. Add the red bell pepper, broccoli, carrots and peas to the skillet. Cook for 5-7 minutes, or until vegetables are tender but still crisp.

3. Add the cold rice to the pan with the vegetables and mix well. Cook for 5 minutes, stirring occasionally.

4. Stir in the soy sauce, olive oil, grated ginger and salt and pepper to taste.

5. Continue cooking for 2-3 minutes more, or until everything is heated through.

6. Serve and enjoy.

Fried rice with shrimp and pineapple.

Fried rice with shrimp and pineapple

Ingredients

  • 2 cups cooked and refrigerated rice.
  • ½ pound of peeled and deveined shrimp.
  • ½ cup of chopped fresh pineapple.
  • ½ cup of fresh or frozen peas.
  • ½ cup of carrots in small cubes.
  • ½ cup of chopped onion.
  • 3 cloves of garlic, minced.
  • ¼ cup of soy sauce.
  • 2 tablespoons of sunflower oil or olive oil.
  • 2 beaten eggs.
  • Salt and pepper to taste.
  • Chopped chives for garnish.

Instructions

1. In a large skillet, heat the sunflower oil or olive oil over medium-high heat. Add the onion and garlic and cook for 2 minutes, stirring occasionally.

2. Add the shrimp and cook until they turn pink and are almost cooked through, about 2-3 minutes.

3. Add the carrots and peas and cook for 2-3 minutes more.

4. Add the rice and pineapple and mix well. Cook for about 5-7 minutes, or until the rice is heated through and lightly browned.

5. Add the beaten eggs and stir until cooked through, about 2-3 minutes.

6. Add the soy sauce and salt and pepper to taste. Mix well and cook for 1-2 minutes more.
