Loaded Baked Potato Casserole

Baked potato casserole is a tasty weeknight meal that the whole family will love. Cooked sausage is topped with mashed potatoes, crispy bacon, cheddar cheese and green onion. Make this casserole to take to your next pot luck or dinner party.

Loaded Baked Potato Casserole

One of the things I love about fall is getting back into the kitchen and cooking up some hearty meals. During the summer when it’s hot out I like to make salads and avoid using the oven very often because it heats up the house too much.

Fall is the perfect time to whip up a new chili or casserole recipe. Today’s Loaded Baked Potato Casserole is a tasty dish the whole family will love. Mashed potatoes are baked with cooked sausage, cheese, sour cream, bacon and green onions. All your favorite baked potato toppings are cooked together into a yummy casserole.

Ingredients for baked potato casserole

  • 5 Medium potatoes
  • 1lb of ground sausage
  • 2 cups of shredded cheese
  • 1 cup of sour cream
  • ½ cup of milk
  • 12 slices of bacon
  • Green onion

Directions

Peel and boil the potatoes until they are cooked. Mash them and add ½ cup of milk and 1 cup of sour cream.

While the potatoes are boiling cook the sausage meat in a pan on the stove over medium- high heat. Cook the bacon until brown and crispy in a separate pan.

Preheat the oven to 350 degrees. In a large glass pan spread the sausage meat on the bottom of the pan. Then spread the potatoes over top. Sprinkle with cheese, bacon pieces and green onion. Bake for 20 minutes and let cool for 10 minutes before serving.

Serve with extra sour cream and cheese.
