Raspberry Peach Bellini
It's Cinco de Mayo which would normally call for Margarita's but since I don't have any limes, I'm making Bellini's instead. Bellini's are one of my favorite cocktails. I know I said I don't drink alcohol very often, but if you put a Bellini in front of my face, it will be drunk and possibly so will I, haha.
This yummy recipe is so easy to make. You need two ingredients. Canned peaches and sparkling raspberry wine.
Start by taking the canned peaches and draining the sweet syrup inside. Save it in a cup and put it in the fridge. Freeze the peaches for several hours in a Ziplock bag.

Once you are ready to make the Bellini's take the frozen peaches and syrup and blend them together in a blender or food processor. Then gently pour in the sparkling raspberry wine until it's a nice slushy consistency.
Pour into your glasses and garnish with fresh raspberries and peaches.

My husband gets to be my guinea pig for these recipes and this one definitely got his seal of approval. Seriously, this is a very tasty drink, and so easy! No messing around with a million different ingredients.
